Sweet Lil' Hand Pies
These delectable little treats will have you yelling Swwwwweeeeet!

Equipment
- Pastry Brush
- Parchment Lined Baking Sheet
Ingredients
- 2 cups Seasonal Fruit - In this video, I used pitted cherries and blackberries
- 1 TFK Quiche Dough
- ½ Tbsp Euro Vanilla
- 1 Cinnamon Stick
- 1 Star Anise
- 1 tsp Candied Ginger
- 1 pinch Salt
- 1 Egg
- 1 tsp Water
- Flour - as needed
- Course Sugar - as needed
Instructions
- Preheat your oven to 375° F.
- In a small pot over medium-high heat, bring the fruit, vanilla, cinnamon, star anise, candied ginger and salt to a boil.
- Reduce the heat to medium-low and simmer for 15 minutes.
- Set aside to cool.
- In a small bowl, mix your egg and water into an egg wash.
- Flour your surface liberally and divide your dough into 4 squares.
- Add approximately 2 Tbsp of the fruit compote to the center of each dough square and seal the edges using a fork.
- Brush each hand pie with the egg wash and top with a sprinkle of course sugar.
- Transfer to a parchment lined baking sheet and bake for 12 minutes (check after 10).

Quick and easy peasy. So glad I had that dough in my freezer this afternoon. Got to use up the rest of my blueberries and added a little more candied ginger, a weakness of mine. I couldn’t stand to waste that extra pastry so I decorated my pies with strips and cutouts laid on after the egg wash and then egg washed them, too. Sugar-in-the-Raw. Ooh la la. Next time I’m going to make 8 half that size. Thanks.
